A simple salad for any time of the year, and a great way to enjoy fresh veggies from your garden (or someone else’s)!
It’s so easy — sometimes, less IS more….

Ingredients:
- 2 large cucumbers, small diced (remove seeds if desired)
- 2 cups cherry or grape tomatoes, quartered
- 4 green onions, chopped
- 1/2 a bunch of fresh mint leaves, chiffonade
- 1/2 a bunch of fresh parsley, chiffonade
- 1/4 cup extra virgin olive oil
- 2 Tbsps apple cider vinegar
- 1/2 tsp sea salt, or to taste
- 2 Tbsps sumac
- crumbled feta cheese, optional to serve
Instructions:
- Prepare/chop cucumbers, tomatoes, green onions, and herbs, and place a large serving bowl.
- Whisk olive oil and vinegar in a small bowl
- Add sumac and salt to taste
- Pour over prepared vegetables and herbs
- Toss gently and serve
