Crockpot meals are a great way to save time in the kitchen. Just throw everything in the pot and let it cook while you go about your day.

INGREDIENTS

1 1/2 lbs boneless skinless chicken breast
1 onion, diced

4 carrots, diced
5 celery ribs, diced
3 cloves garlic, minced

3/4 lb redskin potatoes, chopped
1 bay leaf
1/2 tsp salt
1/2 tsp pepper
6 cups chicken broth
1 lemon, juiced
1/4 cup parsley, chopped

DIRECTIONS

Place all ingredients in the slow cooker except the lemon juice and parsley.

Cook on low for 8 hours.

Once done, remove chicken and chop or shred and then add back to slow cooker and stir in lemon juice and parsley.
