Have a microwave & eggs? Leftover veggies from last night’s dinner?
Toss them in here! Although not listed, you could also add leftover chicken or other meats.
Ingredients
- 1 tsp coconut oil or avocado oil
- 2 eggs
- 1/4 cup of your favorite chopped veggies such as spinach, broccoli, zucchini, peppers or onions
- Salt & pepper, to taste
Directions
- Coat inside of coffee mug with oil to keep eggs from sticking
- Crack eggs into the coffee mug and whisk with a fork to break up egg yolk
- Add in veggies and season with salt & pepper
- Cook in the microwave for about 2 minutes.
- Cook for the first minute then check every 30 seconds until eggs are cooked through and no longer runny.
