INGREDIENTS

  • 1/2 teaspoon chili powder
  • 1/2 teaspoon grated lime rind
  • 1/8 teaspoon Kosher salt
  • 1/8 teaspoon light brown sugar
  • Dash of ground red pepper
  • 2 ears shucked corn
  • Cooking spray
  • 1 teaspoon unsalted butter, softened
  • Dash of Kosher salt

INSTRUCTIONS

  1. Heat a grill pan over medium-high.
  2. Combine chili powder, rind, 1/8 teaspoon salt, sugar, and pepper in a bowl; rub over corn. Coat grill pan with cooking spray. Add corn to pan; cook 10 minutes, turning occasionally. Remove corn from pan.
  3. Top corn with butter and dash of salt.
