This pork loin goes great with a side of mashed cauliflower and roasted garlic broccoli.
INGREDIENTS
2 cloves garlic, minced
3 tbsp olive oil
1 1/2 tbsp dried rosemary 1 lb pork tenderloin
Salt & pepper, to taste
DIRECTIONS
Preheat oven to 400°.
In a small bowl, combine garlic, olive oil, and rosemary.
Place pork tenderloin on a baking pan and season with salt and pepper. Cover pork with the oil mixture, using your hands to rub the garlic and rosemary onto the meat.
Place in oven and bake for 30-35 minutes, until pork is cooked through. Slice to serve.
