Cobb Salad Lettuce Wraps (serves 4 – 2 wraps each)

Ingredients

2       tablespoons canola oil

1 ½    tablespoons red wine vinegar or fresh lemon juice

1       teaspoon Dijon mustard

1/4     teaspoon freshly ground black pepper

1/8     teaspoon kosher salt

8         Bibb lettuce leaves

2         cups shredded skinless, boneless rotisserie chicken breast

1       cup quartered grape tomatoes

4         hard-cooked large eggs, quartered

1         ripe, firm avocado, peeled and thinly sliced

3         slices center-cut bacon, cooked and crumbled

1 ½    ounces blue cheese crumbled

  1. Combine first 5 ingredients in a small jar or bowl; shake or whisk to combine.
  2. Arrange 2 lettuce leaves on each of 4 plates. Fill each lettuce leaf with 1/4 cup chicken, 2 tablespoons tomato, and 2 egg quarters. Divide avocado, bacon, and cheese evenly among lettuce wraps. Drizzle dressing evenly over wraps.
