Spinach Salad with Sugar Snap Peas and Carrot

INGREDIENTS

  • 2 teaspoons extra-virgin olive oil
  • 1 1/2 teaspoons fresh lemon juice
  • 1/2 teaspoon white wine vinegar
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/16 teaspoon sugar
  • 1/2 cup sliced sugar snap peas
  • 1/4 cup shredded carrot
  • 1/4 cup sliced radishes
  • 1/2 (5-ounce) package baby spinach

INSTRUCTIONS

  1. Combine first 6 ingredients in a bowl, stirring with a whisk.
  2. Combine peas, carrot, radishes, and spinach in a bowl. Add oil mixture; toss to combine.
Makes 2 servings (serving size: about 1 1/4 cups)
